Crockpot Chicken Rice Soup

2 chicken thighs, bones in
2 large leaks, chopped
2 carrots, sliced
1 celery stalk, chopped
4 cups of low sodium organic chicken stalk
3 cups water
1 cup rice
2 cloves garlic, minced
Dash of oregano

Himalayan salt and cracked pepper to taste

Combined all ingredients into crock pot and cook on low for 8 hours (the longer, the better)! I like to add salt and pepper per serving, so try to not add too much at the beginning. Allow others to make it according to their taste! I personally like adding fresh parsley on top as a garnish.

What makes this soup so healthy?

Bone broth is my favourite part about this soup. Cooking with the bone creates a very nourishing meal. This is because the bone marrow leaches out into the soup. This aids in digestion and strengthens the immune system. Not only that, but the bone broth contains minerals like calcium and magnesium. The broth is an easy way to absorb all these nutrients. The amino acid content is high, assisting in joint health, gut health and metabolism. Bone broth is the perfect addition to the diet during the holidays! Using a crockpot makes this an easy, satisfying meal.
